Looks beautiful as always. What is Callaloo?
Callaloo is an amaranth, tastes like spinach, best eaten cooked. Much loved by Jamaicans and other West Indies people. Used in soups and stews. Or you can saute it. I like mine with hot pepper and coconut milk.
